There are certain foods that just belong on a game-day table.
Something crispy. Something you can eat with your hands. Something that makes you immediately reach for another napkin—and possibly another sandwich. 😂
And if you’ve been looking for a plant-powered alternative to the classic crispy chicken sandwich, let me introduce you to one of my favorite mushroom transformations: Air-Fried King Oyster Mushroom “Fried Chicken.”
King oyster mushrooms are almost made for recipes like this. Their thick stems have a firm, hearty texture that holds up beautifully to marinating, breading, and air frying. Once coated in seasoned breadcrumbs and cooked until golden, you get a crispy exterior surrounding a tender, juicy center.
Add lettuce, tomato, pickles, and a little vegan mayo, and suddenly game-day food looks very different.
And very delicious.

Why King Oyster Mushrooms?
Mushrooms may not always get the nutritional attention that leafy greens and berries receive, but they deserve a place on the plant-powered plate.
King oyster mushrooms provide fiber along with several B vitamins, minerals, and naturally occurring antioxidant compounds. Mushrooms also contain beta-glucans, a type of soluble fiber found in fungi and certain plant foods.
And because mushrooms deliver plenty of savory, umami flavor, they can be especially useful when you’re transitioning toward eating more plant-based meals. Rather than trying to make vegetables imitate meat exactly, mushrooms bring their own satisfying texture and richness to the table.

Crispy Comfort Food Without the Deep Fryer
One of my favorite things about this recipe is the air fryer.
Traditional fried sandwiches can require a significant amount of oil because the food is submerged during cooking. Air frying lets us create that crisp, golden coating using only a light spray or brushing of oil.
Is this suddenly broccoli because we used an air fryer?
Absolutely not. 😂
But it is a simple way to enjoy the crunch and comfort of fried food while using considerably less added oil than traditional deep frying.
And that is exactly the kind of approach I love: not perfection—just practical upgrades.

The Secret Is the Vegan “Buttermilk”
The mushrooms first take a little bath in homemade plant-based buttermilk made from non-dairy milk and apple cider vinegar or lemon juice.
The acidity slightly thickens the milk, while rice flour helps the mixture cling to the mushrooms. That means more seasoning and more coating stay exactly where we want them.
If you use soy milk, you’ll also get a little more protein than you typically would from almond milk, although either works beautifully for the recipe.
Then comes the flavor: garlic, onion, paprika, thyme, and black pepper.
Nothing complicated.
Just familiar seasonings working together to give every crispy bite plenty of personality.

A Little Produce Goes a Long Way
Don’t stop with the mushroom.
Pile your sandwich with crisp lettuce, juicy tomato, and tangy pickles. If you’d like even more plant-powered goodness, try shredded cabbage, arugula, sliced avocado, or a quick vinegar-based slaw.
You could also use a whole-grain bun when available for additional fiber and whole grains.
Those small choices add up.
That’s one of the things I love most about plant-powered eating. It doesn’t always require completely reinventing your favorite foods. Sometimes it’s simply asking:
How can I bring a few more plants to this plate?

Perfect for Game Day
Serve these crispy mushroom cutlets as full sandwiches, sliders, or simply on their own with your favorite dipping sauce.
For a game-day spread, pair them with:
- crunchy vegetables and hummus
- air-fried sweet potato wedges
- a colorful cabbage slaw
- roasted cauliflower
- fresh fruit
- or your favorite bean-based dip
And don’t be surprised when the mushroom sandwiches disappear first.
Because eating more plants does not mean giving up comfort food.
Sometimes it simply means discovering just how creative—and ridiculously crispy—plants can be.
Progress over pressure, friends. Even on game day. 🌱

Air-Fried King Oyster Mushroom “Fried Chicken” Sandwich
Thick, meaty king oyster mushrooms are marinated in homemade vegan buttermilk, coated with seasoned panko breadcrumbs, and air fried until crispy and golden. Serve them on toasted buns with your favorite sandwich toppings or alone with a dipping sauce.
- Prep Time: 15 minutes
- Marinating Time: 30 minutes
- Cook Time: 19 minutes per batch
- Total Time: 0 hours
- Yield: 4 sandwiches 1x
- Category: Lunch
- Diet: Dairy-Free, Vegan
Ingredients
For the mushrooms
- 12 ounces king oyster mushrooms, about 3–4 large mushrooms
- Light olive or avocado oil spray
Vegan Buttermilk Marinade
- 1 cup unsweetened non-dairy milk, such as soy or almond
- 1 tablespoon apple cider vinegar or lemon juice
- 1/4 cup rice flour
- 1/2 teaspoon salt
Crispy coating
- 1/2 cup all-purpose flour or gluten-free all-purpose flour
- 1/2 cup panko breadcrumbs, regular or gluten-free
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt to taste
For serving
- 4 burger buns or sandwich rolls
- Vegan mayonnaise
- Lettuce
- Tomato slices
- Pickles
Instructions
- Prepare the mushrooms. Wipe the mushrooms clean and trim away any tough ends. Slice the larger mushrooms lengthwise into thick cutlets. For a more rustic “fried chicken” appearance, gently score or pull apart the edges without completely shredding them.
- Make the vegan buttermilk. Combine the non-dairy milk and apple cider vinegar or lemon juice in a medium bowl. Let stand for about 5 minutes. Whisk in the rice flour and salt until smooth.
- Marinate. Add the mushrooms, making sure they are well coated. Refrigerate or set aside for at least 30 minutes.
- Make the coating. In a shallow bowl, combine the flour, breadcrumbs, garlic powder, onion powder, paprika, thyme, black pepper, and a pinch of salt.
- Bread the mushrooms. Remove one mushroom piece at a time from the marinade and allow the excess to drip away. Press firmly into the breadcrumb mixture, coating all sides.
- Air fry. Preheat the air fryer to 350°F if your model recommends preheating. Lightly spray or brush the coated mushrooms with oil. Arrange in a single layer without overcrowding. Cook at 350°F for 15 minutes, flipping halfway if needed. Increase the temperature to 390°F and cook another 4 minutes, or until deeply golden and crisp.
- Build the sandwich. Toast the buns if desired. Spread with vegan mayo, then layer with lettuce, tomato, pickles, and the crispy mushroom cutlet.
- Serve immediately while that coating is at peak crunch.
- Oven option: Bake at 400°F for approximately 25–30 minutes, flipping halfway through and lightly spraying with oil as needed.
- Extra-crispy tip: Panko breadcrumbs give the coating a lighter, crunchier texture. For even more crunch, lightly mist the coating again when you flip the mushrooms.
Notes
Air fryer sizes vary, so cook in batches rather than overcrowding the basket. Mushrooms are best served immediately for maximum crispness. For a gluten-free version, use gluten-free flour, breadcrumbs, and buns.
