There are some flavor combinations that instantly transport you somewhere else.

Pineapple and coconut do that for me.

This Easy Pineapple Coconut Slaw isn’t a traditional Jamaican recipe, but there’s something about the juicy pineapple, coconut, and bright citrus flavors that reminds me of the Caribbean.

And if you’re serving jerk-seasoned anything, this slaw makes an especially good companion.

Jerk seasoning brings the heat, smoke, herbs, and spice. This slaw comes in from the other direction—cool, creamy, slightly sweet, crunchy, and refreshing.

It’s the kind of contrast that makes both dishes taste even better.

Even better? It takes about five minutes of actual work.

Cabbage: The Crunchy Star

Cabbage may not get as much attention as some of its cruciferous cousins, but it deserves a regular place on the plate.

Cabbage is part of the cruciferous vegetable family, along with broccoli, cauliflower, kale, and Brussels sprouts. It provides fiber as well as nutrients including vitamins C and K.

Whole cabbage.

Fiber is especially important for digestive health and helps support a healthy gut microbiome. Eating a variety of fiber-rich plant foods is one of the simplest ways to add more nutrient density to everyday meals.

And using a bag of pre-shredded coleslaw mix means you’re getting those vegetables onto your plate without spending half the afternoon chopping cabbage.

That’s my kind of healthy convenience.

Pineapple Brings Natural Sweetness

Pineapple gives this slaw its tropical personality.

It provides vitamin C and manganese while adding enough natural sweetness that you don’t need much additional sweetener in the dressing.

I use pineapple packed in 100% juice rather than heavy syrup and reserve a little of the juice for the dressing. It helps thin the vegan mayonnaise—or whole-food cashew dressing—while carrying that pineapple flavor throughout the entire slaw.

Green Onions Add More Than Flavor

Green onions provide a mild onion flavor without overpowering the pineapple and coconut.

Like many colorful plant foods, members of the onion family contain naturally occurring plant compounds, while also contributing small amounts of vitamins and minerals.

They’re a simple way to add another plant to the plate—which is something I’m always looking for.

Coconut Makes It Feel Like Vacation

A little shredded coconut turns ordinary pineapple coleslaw into something that feels decidedly more tropical.

You don’t need much. About 1/4 cup gives you little pops of coconut flavor throughout the salad without overwhelming the freshness of the cabbage and pineapple.

I prefer unsweetened coconut because the pineapple already brings plenty of natural sweetness.

Want a Whole-Food Creamy Dressing?

Traditional creamy slaws rely on mayonnaise, and vegan mayonnaise is certainly an easy option. But if you’re looking for a more whole-food, plant-based alternative, you can make a simple dressing from raw cashews, pineapple juice, lemon, and a pinch of salt.

Cashews blend into an incredibly smooth, creamy sauce while also contributing plant-based fats, protein, magnesium, and other nutrients.

It’s a simple swap that keeps all the creamy texture while relying primarily on minimally processed plant foods.

If you need a nut-free alternative, plain unsweetened plant-based yogurt can work beautifully too.

Lemon Keeps Everything Bright

Fresh lemon juice balances the creamy dressing and sweet pineapple.

That touch of acidity is important. Without it, the dressing could easily become too sweet or heavy. Lemon keeps the flavors fresh and bright and contributes a little additional vitamin C along the way.

A Slaw That Gets Better While You Do Nothing

This may be the best part.

Although you can assemble the slaw in about five minutes, I don’t recommend eating it immediately.

Give it time.

Four hours in the refrigerator allows the cabbage to soften slightly and all those pineapple, citrus, coconut, and creamy flavors to mingle.

Overnight is even better.

Which makes this an excellent recipe for cookouts, family gatherings, potlucks, or meal prep because you can make it before you actually need it.

What to Serve With Pineapple Coconut Slaw

Try it with:

  • Jerk tofu or tempeh
  • Jerk cauliflower
  • Jamaican-inspired rice and peas
  • Black bean or veggie burgers
  • Plant-based tacos
  • Grilled vegetables
  • BBQ jackfruit sandwiches
  • Grain bowls
  • Cookout favorites

You can also pile it directly onto a veggie burger or sandwich instead of serving it on the side.

And yes, it’s messy.

That’s part of the experience. 😂

Progress Over Pressure

One of my favorite things about recipes like this is that they prove plant-powered eating doesn’t have to be complicated.

Sometimes wellness looks like preparing an elaborate meal from scratch.

And sometimes it looks like opening a bag of shredded cabbage, draining a can of pineapple, stirring together a five-minute dressing, and putting the whole thing in the refrigerator.

Both count.

And if you’re working toward eating more whole foods, you don’t have to overhaul every recipe at once. Swap the mayo for a cashew-based dressing when it works for you—and use the convenient option when that’s what makes getting more plants on your plate possible.

Let your plate be colorful, flavorful, nourishing—and easy enough that you actually enjoy making it.

Ingredients

Scale
  • 12 oz coleslaw mix or finely shredded cabbage
  • 1 (20-oz) can crushed pineapple in juice, drained
  • 6 Tbsp reserved pineapple juice
  • 1/4 cup sliced green onions
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup vegan mayonnaise
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp agave nectar, or to taste
  • Pinch of salt

Whole-Food Plant-Based Mayo

  • 1/2 cup raw cashews, soaked and drained
  • 1/4 cup reserved pineapple juice
  • 1 Tbsp fresh lemon juice
  • 24 Tbsp water, as needed
  • Pinch of salt
  • 12 tsp agave, optional
  • Blend until completely smooth and use in place of the vegan mayonnaise dressing.

Instructions

  1. Combine cabbage, pineapple, green onions, and coconut in a large bowl.
  2. Whisk vegan mayonnaise, lemon juice, reserved pineapple juice, agave, and salt together in a small bowl. If using the cashew version, blend its ingredients until creamy.
  3. Pour dressing over the cabbage mixture and toss until evenly coated.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Toss again before serving and adjust seasonings to taste.
