1. Caramelize the Onions
Heat 1 tablespoon of olive oil in a skillet over medium-low heat. Add the sliced onion and a pinch of salt.
Cook slowly for 15–20 minutes, stirring occasionally, until the onions are soft, golden brown, and caramelized. If they begin sticking to the pan, add a tablespoon or two of water rather than additional oil.
2. Assemble the Pizza
Preheat the oven to 400°F.
Place the flatbread or naan on a baking sheet.
Spread the caramelized onions evenly over the crust. Arrange the sliced fresh figs on top and sprinkle with vegan feta.
3. Bake
Bake for approximately 10–12 minutes, or until the crust is crisp and golden and the figs have softened and begun to caramelize around the edges.
