This Vegan Strawberry Lassi is a refreshing blend of sweet strawberries, creamy plant-based yogurt, and fragrant cardamom. Light, naturally sweet, and beautifully pink, it’s a delicious dairy-free beverage that’s perfect for breakfast, brunch, or a cooling afternoon treat.

Ingredients

  • 2 cups fresh or frozen strawberries
  • 1 cup unsweetened plain vegan yogurt (coconut, almond, soy, or cashew)
  • ½ cup unsweetened plant milk
  • 12 tablespoons maple syrup or agave (optional)
  • ½ teaspoon ground cardamom
  • 1 tablespoon fresh lime juice
  • ½ teaspoon vanilla extract (optional)
  • 46 ice cubes (optional)

Optional Garnishes

  • Fresh strawberry slices
  • Chopped pistachios
  • Fresh mint leaves
  • Sprinkle of ground cardamom

 

Instructions

  1. Add the strawberries, vegan yogurt, plant milk, maple syrup (if using), cardamom, lime juice, and vanilla extract to a blender.
  2. Blend until smooth and creamy.
  3. Add ice cubes and blend again for a colder, frothier texture.
  4. Taste and adjust sweetness as needed.
  5. Pour into two glasses and garnish as desired.
  6. Serve immediately.

 

Notes

  • Frozen strawberries create a thicker, colder lassi.
  • Coconut yogurt provides a rich, dessert-like flavor.
  • Soy yogurt offers additional protein and a creamy texture.
  • For a slightly sweeter, floral flavor, add ½ teaspoon rose water.
