- 2 lbs potatoes (red, Yukon Gold, Russet, or sweet potatoes all work great!)
- 2 Tbsp olive oil
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- Sea salt, to taste
- Optional: Your favorite dried or fresh herbs — rosemary, thyme, basil, or oregano add extra flavor and antioxidants.
- Preheat your oven to 450°F (232°C). Line a large baking sheet with parchment paper.
- Scrub the potatoes well, leaving the skins on for extra fiber and nutrients.
- Cut potatoes into even-sized fries or wedges — whichever you prefer!
- Soak in cold water for at least 5 minutes, or up to 1 hour if time allows. This helps remove excess starch for crispier fries.
- Drain and pat dry thoroughly with a clean towel.
- Toss potatoes with olive oil, garlic powder, onion powder, smoked paprika, and salt. Add herbs if using.
- Spread fries in a single layer on the prepared baking sheet, leaving space between each piece for even baking.
- Bake for 20–25 minutes, flipping halfway through, until fries are golden brown and crisp on the outside but tender inside.
